A wonder from the deep

This week Seaspoon were kind enough to send me some of their goodies to get creative with and I can safely say that I'm a big fan!


Firstly, I love the health credentials of their products (and I'm not talking about the 'JuicePlus', fad diet benefits). Seaweed is a nutrient rich food that really has stood the test of time! It contains Calcium, Potassium, Magnesium, Vitamin A, Vitamin B12, Vitamin C, Iodine ... the list goes on! If you're interested in finding out more about them, check out their page here


 

As some of you may have seen, I decided to create my own take on Salt & Pepper chips using the Seaweed Seasoning. Below is my recipe but be warned, I did use my Phillips Air Fryer (the best kitchen gadget of all time).





Ingredients

2 large floury potatoes

Chilli Fry Light

1 small red onion

1 red pepper

2 cloves of crushed garlic

1 tsp sugar/sweetener

1 tsp Chinese five-spice powder

1 tsp chilli flakes

2 tsp Seaweed Seasoning

Splash of soy sauce

Black pepper to serve


Garnish

1 finely sliced green chilli

2 finely sliced spring onions


Method

  1. Chop the potatoes into chunky chips and pop them into a pan of simmering water. Par boil these until they're soft around the edge and drain.

  2. Rinse the chips with cold water to remove starch and to cool them down.

  3. Drain the chips and toss them in a bowl with a decent spritz of Chilli Fry Light.

  4. Chuck the chips into the air fryer and cook at 200° for around 20 minutes.

  5. While the chips are cooking, chop the red onion and pepper then soften in a frying pan with fry light.

  6. Once the veg has started to brown, stir in all the dried seasoning and herbs then take the pan off the heat until the chips are cooked.

  7. Place the cooked chips into the frying pan with the seasoning and coat with a splash of soy sauce.

  8. Stir until all the chips are coated in the seasoning and add some ground black pepper

  9. Serve with chopped spring onion and fresh chillis - Enjoy!
