Lemon, Poppy Seed & Courgette Cake

If you're an instagram follower, I'm sure you'll remember the arm sized courgette I shared on my story... and here's a recipe I developed using that organic beauty!



Ingredients:

175g Margarine

175g Sugar

Zest of 1 Lemon

1tbsp Lemon Juice

140g Grated Courgette

3 Medium Eggs

250g Self Raising Flower

2 tbsp Poppy Seeds


To decorate you'll need lemon, icing sugar, poppy seeds & pumpkin seeds


Method:

  1. Smash together margarine & sugar.

  2. Add in the grated courgette, lemon and poppy seeds.

  3. Sieve in self raising flours & fold in the eggs.

  4. Pop into a lined loaf tin and bake at 150°c for 50 minutes.

  5. Once baked, take out of the tin and place on a cool wrack, piece with a skewer and pour the lemon juice over to create a gooey zesty texture

  6. Decorate with lemon icing and pumpkin & poppy seeds
