Veganuary brunch recipe!
Chipotle beans and avocado 🥑💚

Ingredients
1 small pack of cherry tomatoes, halved 3 spring onions finely chopped 2 garlic cloves, crushed 1 tsp ground cumin 2 tsp chipotle chilli flakes 1 X kidney beans, drained 1 avocado sliced
2 X sour dough toast
Radishes, coriander, chilli and lime to serve.
Method
- Pour a splash of oil to a frying pan with half of the cherry tomatoes, all the spring onion and the crushed garlic, cook until soft.
- Add the chilli flakes, cumin and beans and cook until heated through.
- Place the beans on to the toast and top with the remaining cherry tomatoes and avocado
- Squeeze some fresh lime over the avocado and sprinkle with fresh coriander and salt
- Scatter with radishes and chillies if they're your thing... I love them! Enjoy!
