Ingredients were bought at @sainsburys so they're easy to find!

200g vegan butter (I used Flora buttery)
350g light brown soft sugar
4 chia eggs (1 egg = 1 tbsp chia seeds + 2.5 tbsp water)
80g cocoa powder
150g self-raising flour
1 tsp baking powder
1 tsp almond essence
2 tbsp flaked almonds
150g chopped frozen cherries
1. Prep chia seed eggs and leave to soak for 10 mins.
2. Pop all ingredients into a food processor excluding the cherries and almonds.
3. Take the mixture out the processor and stir in the chopped cherries and almonds
4. Bake on 160°C for around 30 minutes in a tray lined with greaseproof paper - these will remain gooey so don't try the fork test, just wait until they look solid.
I topped mine with more fruit and nuts as well as some chocolate hazelnut vegan
**DISCLAIMER, I made this recipe up as I went along. I taste tested the mixture as I went. S000 many vegan recipes require expensive and hard to find ingredients, I wanted to make something that's easy for you guys to recreate. I'd advise everyone to taste test as they go along, it makes it more fun and you can check it's not too bitter or sweet. Perks of vegan baking - you can eat it raw! 🌿💚
